Gipsy Hill Wooden Ships English IPA 6.5%
The team at Gipsy Hill Brewery, founded in 2014 in South Norwood, London SE27, decided it would be fascinating to create the type of IPA brewed in Victorian England and shipped to India in wooden ships. As a result, they brewed a 6.5% beer and aged it for three months in a variety of oak casks: Bourbon, red wine, white wine and sherry.
The brewery joined forces with City Cruises, which runs daily trips on the River Thames. The casks were stored on boats for three months as the boats plied their voyages on the river.
The beer is brewed with pale, light crystal and English cara malt and is hopped with Pilgrim, UK Chinook, Admiral and First Gold varieties. The version aged in red wine casks has a massive nose of oak, smoke, caramel, tart red wine and spicy hops. Bitter spicy hops dominate the palate but are balanced by honey malt, dark fruit, oak and caramel. The finish is tart, acidic and woody, spicy, hops and biscuit malt.
