Stewart Brewing Elysium Speyside Malt Edition

Stewart Brewing is a fast-growing independent brewery in Scotland, founded by Steve Stewart in 2004. Steve moved to new and bigger plant at Loanhead near Edinburgh in 2013 to keep up with the demand for his beers, which include a traditional 80 Shilling Ale, Scotch Ale, IPA and Edinburgh Gold.

A large range of seasonal and special beers are produced, including three versions of imperial stout matured in whisky barrels obtained from distillers of Bourbon, Speyside malt and Highland malt.

The Speyside edition, 11.5%, is brewed with pale malt, oats, wheat, roasted barley, black and chocolate malts, and medium and dark crystal grains. The single hop is Pilgrim.

The jet black beer has a herbal and spicy aroma with notes of camomile and candied fruits, along with oak, smoke and creamy malt. Warming whisky notes fill the mouth along with oak, creamy malt, roasted grain and spiced fruit. The long finish has further notes of oak, whisky, spiced fruit, creamy malt and a gentle hint of hops.

This superb, rich and complex beer is warming, with a delicious interweaving of oak, hints of whisky trapped in the wood, roasted grain, spiced fruit and light hops.
